Aangezien ik nog een beetje in de vakantiesfeer zit, wederom een bekend en makkelijk gerecht. Maar dan een tikkeltje anders… Wie een moestuin heeft, weet dat je (zeker na een goede zomer) een aardig voorraadje courgettes ineens kan hebben. Een super veelzijdige groente, die ook in dit recept naast het gehakt en de bruine bonen een ‘hoofd’rol heeft. En de rode peper geeft een extra ‘kick’. Het is zelfs ook lekker om er cacao aan toe te voegen…een ingrediënt waar je niet zo gauw aan denkt bij dit gerecht, maar zeer zeker vaker in de Mexicaanse keuken gebruikt wordt. Probeer het eens!

Een klassieker uit het Midden-Oosten en prima geschikt om in de tajine te maken. In ieder land of streek wordt het anders gemaakt. kan met gehakt, kip of vegetarisch. Pilav komt van het woord ‘pilau’, dat ‘rijst’ betekent.

Maar het accent van dit informatieve stukje wil ik op de cashewnoot leggen. Verwerkt in allerlei soorten gemengde, gesuikerde, gebrande, (on)gezouten mix van noten en zaden, valt de cashewnoot niet zo op. Toen ik echter in Brazilië woonde, een van producerende landen, kwam ik in contact met het hele arbeidsproces rondom de cashewnoot. Foto’s heb ik er helaas niet meer van, vandaar het linkje naar Wikipedia onderaan. De cashewnoot groeit onderaan een schijnvrucht aan de kasjoe-boom. De qua uiterlijk op de paprika lijkende schijnvrucht kan je eten en smaakt naar weeïge appel.

Om de noot te verkrijgen, moet ook de schil die er omheen zit verwijderd worden omdat die giftig is. Het is dus een zeer arbeidsintensief proces. Vandaar dat cashewnoten ook niet zo goedkoop zijn.

In onderstaand recept maak ik gebruik van kip en ‘warme’ vruchten als abrikozen en pruimen. Makkelijk, voedzaam en snel.

  2. Doe een beetje olie in de pan van de tajine de kipblokjes, abrikozen, pruimen met de sambal en schep onder elkaar. Kurkuma, peper en zout er doorheen scheppen. Daarna de 4 koppen rijst, met 6 koppen bouillon. Zet ongeveer een half uur in een voorverwarmde oven op 180 graden.
  3. Check of de kipblokjes gaar zijn, anders oventijd verlengen. Garneer met de cashewnoten Eet smakelijk
